Meet Kat!

We are having a lot of fun meeting bakers from throughout the Dallas area, and we hope to enjoy everyone’s baking and hard work at Cupcake Camp Dallas in a few weeks.  But I also hope everyone gets to talk to some of the folks from the LEAP foundation.  They just got back from a trip to the Dominican Republic where they performed several life-changing operations.

Kat is very familiar with the LEAP foundation, and has witnessed their dedication and commitment to children of the world.  She has generously decided to be a part of Cupcake Camp Dallas by donating her homemade cupcakes!  Read more about this amazing woman in our interview below:

What type of cupcake will you be bringing to Cupcake Camp Dallas? Rainbow

Why do you want to be part of Cupcake Camp Dallas? The LEAP Foundation is an incredible group.   Our family recently hosted a 5-year-old Russian Orphan with a severe cranial facial deformity.  She was able to come to the United States under a medical visa, made possible by LEAP Foundation, and she has had five surgeries and several other procedures under anesthesia, all paid for by the LEAP Foundation, estimated in excess of $100,000.  She now lives with her forever family as they finalize her adoption.

What makes a great cupcake? Moist and doesn’t crumble.

What’s your favorite cupcake flavor? Red Velvet

CupCake FabuLous

We are very excited to have CupCake FabuLous join us at Cupcake Camp Dallas. Not only will they be bringing their delicious cupcakes, but they have also made a generous financial donation!!  Cupcake FabuLous is a family owned bakery that specializes in cupcakes, and has been mastering sugary treats in the Greater Dallas area since 2007.  Read our interview below:

Are you a pro or amateur baker? I grew up helping my grandmother and mom in the kitchen, so I was taught by the best, but I guess I’m in between.  I am constantly learning new tricks and ways of baking.

What type of cupcake will you be bringing to Cupcake Camp Dallas? I’m still working on that, but Prince Charming is one of our top sellers, so some of those for sure!

Why do you want to be part of Cupcake Camp Dallas? I have kept up with all the other Cupcake Camps and kept hoping Dallas, Texas would have one at some point.  This event raises money for a great cause and there are TONS of cupcakes, who wouldn’t want to be part of that?!

What makes a great cupcake? I am big on moist cake and a delicious frosting, something smooth and creamy, like cream cheese or vanilla mousse.  I think if the cupcake has those 2 things, it’s perfect!

What’s your favorite cupcake flavor? That’s a hard one.  I guess I have 2, I love Banana Peanut Butter, and Red Velvet with Cream Cheese frosting.

Do you have a favorite cupcake memory? My favorite memory is making them with my daughter when she was little, she loved putting M&M’s on top and then picking them off so she could get to the icing, she has been a cupcake fan from day 1.

Got a good cupcake tip? If you get cupcakes in a cardboard box but don’t plan on eating them for a day or 2, take them and move them to a tupperware container so they don’t lose their moisture.  Cardboard absorbs the moisture from the cupcakes, drying them out.  It’s a tip I always like to pass along to my customers. :)

What type of cupcake will you be bringing to Cupcake Camp Dallas? We’re in-between cupcakes right now. However, whatever we land on, it’s guaranteed to be the most delicious thing we’ve ever eaten.

Why do you want to be part of Cupcake Camp Dallas? To celebrate cupcakes and raise money for LEAP.

What makes a great cupcake? Good sprinkles.

What’s your favorite cupcake flavor? Funfetti

Do you have a favorite cupcake memory? Birthdays in elementary school were a big deal. When it was your birthday, often times a kid’s parents would bring cupcakes to school to help celebrate. I had just moved to Texas and didn’t have a lot of friends as a 2nd grader. My mom baked funfetti cupcakes in ice cream cones and I literally became the most popular kid in the class. Cupcakes make friends, a rule that I’m finding out is even more true as an adult.

Got a good cupcake tip? Eat them quick, before somebody else gets to them!

Meet Emily (SweetBellaRoos)!!

Hi Cupcakers!  I hope you are all busy taking pictures for our facebook photo contest!  We want to see Dallas cupcake bakers at their best!!  Today, we are featuring novice baker, Emily.  She is a proud mother, baker, and also makes amazing aprons.  We look forward to meeting Emily and her wonderful creations at Cupcake Camp Dallas!

Are you a pro or amateur baker? I am an amateur.

What type of cupcake will you be bringing to Cupcake Camp Dallas? I will be bringing my Champagne Cupcake.  Slightly sweet vanilla cake, with a champagne cream cheese filling, and topped with whipped cream frosting.

Why do you want to be part of Cupcake Camp Dallas? I love cupcakes.  I especially love cupcakes that are raising money for a great cause. I’m very excited to get to be a part of this event.

What makes a great cupcake? It’s all about the icing for me.  The icing can’t be too sweet, overpowering, or dry.  I want a moist cupcake with enough frosting to get some with every bite.

What’s your favorite cupcake flavor? Chocolate all the way

Do you have a favorite cupcake memory? When I traveled to St. Louis earlier this year, my friend and I made plans to stop at a local cupcake bakery.  Unfortunately when we got there we realized that the bakery was no where near our hotel.  We went anyway, and now we joke that it took us a plane, a tram, and a taxi to get to those cupcakes!

Got a good cupcake tip? For a more presentable cupcake double up on your baking cups.  Use one for baking and then slip another liner over for show

The Perfect Slice

The Perfect Slice is a professional bakery that will be joining us this year at Cupcake Camp Dallas!  Owner and baker Lindsey take pride in baking with specialty ingredients to find the most elegant, pleasing, and exciting flavors.  As an example, some of their baked goods include imported chocolate sprinkles from Holland, organic or locally-grown fruits and flavorings whenever possible, imported green tea matcha from Japan, and many other distinctive ingredients.  The result is a perfectly unique (and just plain perfect) pastry! Also of interest, Lindsey is not only a culinary perfectionist, she is also a law student at the SMU Dedman School of Law.  Wow!

What type of cupcake will you be bringing to Cupcake Camp Dallas? Caramel Macchiato (caramel espresso), Heartbreak (chocolate raspberry)

Why do you want to be part of Cupcake Camp Dallas? We really love all things cupcake!  Who wouldn’t want to be a part of a cupcake-centered event that also benefits such a great charity?

What makes a great cupcake? No matter how fun the flavors are, if the cake itself isn’t amazing and the frosting isn’t yummy, the cupcake just can’t be great.  I also love all-natural flavors and ingredients – anything fake and artificial ruins the simplicity that we love about cupcakes!

What’s your favorite cupcake flavor? This question always stresses me out!  I love so many different cupcakes… I truly can’t pick a favorite!

Do you have a favorite cupcake memory? When I first started baking cupcakes, I spent an entire summer trying different chocolate and vanilla base recipes and then coming up with fun new flavor combinations.  There were always tons of cupcakes laying around, so I would take them to work and school with me.  Everyone loves the girl with cupcakes, so it was a great summer!

Got a good cupcake tip? It’s important to have a fantastic vanilla and chocolate recipe.  Then, have fun trying different flavor alterations inspired by the foods you love!

Meet Jessica (JessiCakes)

Are you a pro or amateur baker? I would say I’m an amateur baker on the journey to professional…but its a slow journey. :)

What type of cupcake will you be bringing to Cupcake Camp Dallas? I’m not sure yet. Something unique though! I’ve got it narrowed down, but I want a cupcake that will shine!

Why do you want to be part of Cupcake Camp Dallas? Because I love Cupcakes and because all the proceeds are going to such a great cause.

What makes a great cupcake? I think the frosting! It can make or break the cupcake. It has to balance perfectly with the cake.

What’s your favorite cupcake flavor? Something simple. Vanilla or a pound cake with a yummy frosting, but I’ll be honest, I love them all.

Do you have a favorite cupcake memory? A few years ago, a coworker and I would always buy a cupcakefor one another on our birthday or just for fun. It was such a fun way to celebrate and a cute tradition. I still see cupcakes and think of her, even after we stopped working together!

Got a good cupcake tip? It is not hard to make a cupcake look amazing. Instead of using an icing spatula to put your frosting on, use a plastic bag a large piping tip. Then pipe on! It goes from sloppy to clean and sharp!

Meet Kellie (Kellie’s Cakes)

Why do you want to be part of Cupcake Camp Dallas? I love to bake and eat cupcakes! Plus, it is a wonderful cause and I am proud to be a part of it.

What makes a great cupcake? A super moist cake with a light and fluffy icing with just the right amount of sweetness, and also the cuteness factor!

What’s your favorite cupcake flavor? Definitely Red Velvet.

Do you have a favorite cupcake memory? Every time I eat or bake a delicious cupcake, it’s a good memory!

Got a good cupcake tip? Be sure and take cupcakes out of the pan immediately after you remove them from the oven. Otherwise, your liners may peel away from the cupcake. Not attractive.

Meet Baker Jessica (My Baking Heart)

What type of cupcake will you be bringing to Cupcake Camp Dallas? An angel food cake… frosting has yet to be determined!

Why do you want to be part of Cupcake Camp Dallas? I remember seeing the poster for ‘Cupcake Camp: Los Angeles‘ when my boyfriend was living out in San Diego, thinking that it would be fun to go. But since I wouldn’t be out there visiting him at the time of the event, I was disappointed. Imagine my excitement when I heard that you were coming to Dallas! I knew I had to participate instead of just attending, so here I am! :)

What makes a great cupcake? A light cake with a moist crumb… and that all-important fluffy frosting!

What’s your favorite cupcake flavor? Dark Chocolate

Do you have a favorite cupcake memory? My sister made my 29th birthday super-special with several presents given to me at different times throughout the day… every one of them cupcake-themed!

Meet Baker Mike!

Good morning campers!  We are all excited to announce that Central Market will be sponsoring the Kid’s center with build-a-cupcake stations at Cupcake Camp Dallas.  We’d also like everyone to meet one of our bakers, Mike.  He’s a good friend of ours, and a very talented baker!

Are you a pro or amateur baker? I’m a home baker.  I have taken a few pastry classes at El Centro College (for fun).

What type of cupcake will you be bringing to Cupcake Camp Dallas? Since it’s spring, I wanted to showcase a fruit.  I decided on a white cake recipe with a good bit of strawberries.  I haven’t decided on the icing yet.

Why do you want to be part of Cupcake Camp Dallas? I love to bake, and I am always looking for ways that i can make a difference in Dallas and around the world.  I don’t know that many bakers, so I’m looking forward to trying other people’s delicious desserts.

What makes a great cupcake? The cake is the star, and it should be moist and soft.  The icing should be a nice complement, and it shouldn’t obliterate your taste buds with sweetness.

What’s your favorite cupcake flavor? Chocolate with dark chocolate icing.

Do you have a favorite cupcake memory? A friend sent me a link to a cupcake blog.  I was so impressed and inspired that I started baking every weekend.  That was six years ago, and I still bake almost every weekend for friends.

Got a good cupcake tip? Baking is a science.  Measure everything accurately and resist the temptation to stray from the recipe.  Also, practice makes perfect – your friends and family will love you!
