Eating cupcakes to do good!

LEAP is traveling to Belize twice in the next couple of months–from May 18th- 21st and again from June 8th – 11th.  They will be performing corrective surgeries at the Northern Regional Hospital. During their May trip, LEAP will bring specialists in craniofacial and eye surgery, and the June trip will focus on craniofacial and hand surgery.

This is LEAP’s 17th year providing free medical services to the people of Belize, continuing a commitment to their long-term needs. (read more)

Featured Bakery: Haute Mama Dessert Company

I’m Tiffany Key, owner of Haute Mama Dessert Company in Allen, Texas. I am a professional baker.  I am originally from Ft. Lauderdale, Florida but attended college at The University of Texas in Austin and have lived in Texas ever since. My entire family is from the deep south, so I grew up eating wonderful, made from scratch, comfort desserts. This had a huge influence on my baking as many of my recipes reflect traditional, southern flavors with a modern twist, but I also love being innovative and trying new flavor profiles. I will be bringing many different types of cupcakes like our brownie hot fudge sundae, chocolate toffee crunch, chocolate molten,  banana caramel strawberry lemonade and many more! I was fortunate to be part of Cupcake Camp Dallas last year and it was an incredible experience. It was lovely seeing so many bakers come together who have a passion for cupcakes to help an amazing organization and I enjoyed seeing so many different types of cupcakes!
In baking cupcakes, and cooking in general,  it is  important to always use the highest quality ingredients.  We only use European chocolate, real butter and Tahitian Vanilla in all of our cupcakes and you can definitely taste the difference! My tip is to always bake from scratch and to make sure you do not overmix your batter-it is the difference between a light, fluffy cupcake and a dense, heavy cupcake.

  • This year, our theme is “Frosting, the international language of love.”  We’re all Texans now, but tell us a little bit about your heritage!  Where did you grow up?  Where do you live now? I was born and raised in Texas, I’ve moved around a little in Texas, but now I’m happily settled in Fort Worth.
  • What type of cupcake will you be bringing to Cupcake Camp Dallas? I will be bringing my signature flavor, Pink Champagne, along with PB&J, Chocolate Covered Cherry, and a fewother fun flavors.
  • If you were a part of Cupcake Camp Dallas last year, tell us a little bit about your experience.  I was lucky enough to be a part of Cupcake Camp last year and it was so much fun. I am always on the lookout for new and exciting cupcake variations and it was so fun to see so many under one roof!
  • What makes a great cupcake? Moist cake and just enough frosting.
  • Got a good cupcake tip? Don’t overbake or overmix! There’s nothing worse than a dry cupcake.

Amanda Rodriguez-Smith (Stressed Desserts) will be baking for Cupcake Camp Dallas for her first time this year.  We are looking forward to her sweet creations!

  • This year, our theme is “Frosting, the international language of love.”  We’re all Texans now, but tell us a little bit about your heritage!  Where did you grow up?  Where do you live now?  I am born, raised and currently live in Dallas, Texas. I take a lot of influence from other countries on how they treat their baked goods.  Simplicity is an art in itself and admired around the world.  
  • What type of cupcake will you be bringing to Cupcake Camp Dallas?  I’ll be bringing lots of fun flavors and I’m still deciding on a few….but one for sure will be my pumpkin cupcake.  I know it is the start of the summer heat but I personally think pumpkin is great year round!
  • How did you hear about Cupcake Camp Dallas?  Last year, I unfortunately found out about Cupcake Camp too late.  This year, I watched closely and jumped on as soon as registration opened!
  • What makes a great cupcake?  Anything with passion put into it.  I believe you can tell the difference in someone who is just baking as a chore and someone who is baking because they really love what they do.
  • Got a good cupcake tip?  Don’t use boxed mixes!  Making cupcakes from scratch is really not that time consuming and worth it in the end.  If you’re pressed for time, mix the dry ingredients ahead of time and put them in a sealed container.  Just be sure to use it within a day or so!

I am originally from Louisiana, now living in the Lone Star State. As an Industrial Chemist, baking is like chemistry: it is a complex experiment with directions that, when followed precisely, can be repeated over and over again to produce identical results.

 
What type of cupcake will you be bringing to Cupcake Camp Dallas?  
Although I have been baking 15 years, I still consider myself an amateur, but never fret, I will be bringing my Southern Hospitality right to the Heart of Texas with my old fashion “SOUTHERN HOSPITALITY SAMPLER”!
 
What makes a great cupcake? Got a good cupcake tip? 
My secret to a fabulous cupcake is PRACTICE….if at first you don’t succeed, TRY, TRY, TRY again.

Lisa Schiller has been baking for family and friends for many years but she just recently opened my own home-based business in March 2012. It will be her first year to attend Cupcake Camp Dallas!

  • This year, our theme is “Frosting, the international language of love.”  We’re all Texans now, but tell us a little bit about your heritage!  Where did you grow up?  Where do you live now? I was born and raised in Virginia Beach, VA. I enjoy summer, the sun and the beach. I make a trip back home to the beach at least twice a year. I moved to Texas 7 1/2 years ago. I currently reside in Sachse, TX. 
  • What type of cupcake will you be bringing to Cupcake Camp Dallas?  Since the theme this year is “Frosting, the international language of love: and I am from a state who’s motto is “Virginia is for Lovers”, I will be bringing cupcakes that are sweet, beach/summer inspired and melt in your mouth. Here is the list of what I will be bringing:
  1. Pina Colada Passion – A cupcake filled with coconut and pineapple throughout.
  2. Irresistable Love – A tart lemon cupcake with a sweet raspberry buttercream frosting.
  3. Pure Bliss – A heavenly passion fruit cupcake with a creamy mango butter frosting.
  4. Strawberries & Cream Obsession – A light strawberry cupcake with a whipped cream frosting.
  5. Chocolate Mocha Amour – Light mocha and chocolate cupcake with a hot chocolate frosting.
  6. Pineapple Devotion – A sweet pineapple cupcake with a pineapple cream cheese frosting.
  • What makes a great cupcake? A great cupcake is one that reaches every taste bud with an explosion of flavors.
